Hello, and welcome to my blog! My name is Rose. I am an unrepentant nerd with a sub-par brain-to-mouth filter and an unreasonable love of all things caffeinated. Expect nerdy references, inappropriate sarcasm, terrible puns, and wordplay in general.
I also really love to bake, and can follow a recipe like nobody’s business. Unfortunately, due to the rise in food allergies and sensitivities, particularly gluten, I can’t always make the delicious things I want to bake because some of my
guinea pigs taste-testers are intolerant. While I am fortunate enough to have few food sensitivities (mangoes, pineapples and kiwis are jerks, JSYK), others in my family aren’t as lucky. My cousins, mom, and sister-in-law have all had to go gluten-free, and this makes baking for them more of a challenge.
While there is a plethora of gluten-free recipes online, and several guides to different types of all-purpose flour alternatives, I could never find exactly what I was looking for in a gluten-free flour guide. Specifically, I wanted something that could tell me “OK, Rose, If you use only X type of gluten-free flour, your finished baked good will end up like this. It will have this texture, and will bake up in that manner.”
So I decided to make the comprehensive index of gluten-free flours that I was looking to find. With pictures, because visual aids are always helpful. Then, should I try and convert a regular recipe (or play mad scientist and create my own), I’ll be able to find the blend of gluten-free flours that will best approximate the effect of all purpose flour in the particular baked good I am trying to duplicate.
